Carrot Cake
Membership Meeting Pot Luck recipe - 2/28/2012
Ingredients:
3 eggs
2 cups white sugar
1 1/2 cups oil
3 cups flour
1 Tablespoon baking powder
2 cups grated carrots
1 cup crushed pineapple in
juice
1 cup walnuts
1 grated orange rind
Mix all the ingredients together and cook in a 12x8 pan for 45 minutes at 350.
FROSTING
Mix 1/4 cup butter
3 oz of cream cheese
1/2 teaspoon vanilla and confectionary sugar to taste.
(When I made the cake, I cut the sugar down by about 1/2 cup and I used 3/4 cup brown and 3/4 cup white sugar. I didn't use the orange rind. And for the frosting, I used a stick of butter, vanilla, milk, and greek yogurt, a box of confectioners sugar - or you can substitute 8 oz cream cheese for butter.)
This not-so-healthy, but yummy cake was made and the recipe provided by Margaret C. (her friend Lori's recipe)
